外資系チェーンのレストランやカフェでは、店内で英語や現地の言葉で掛け声をかける場面が少なくないです。しかし、これらの掛け声は果たしてしっかりと機能しているのでしょうか。どうも、星がつくようなレストランで厨房とホールがやり取りをするための外国語とは違った用途の記号になっているように思えます。
例えば、マクドナルドでは(今は実施していないかもしれませんが)、ハンバーガーなど残数管理をする担当者が厨房にオーダーをかけていました。その際に「フライヤー、ツー フィレ プリーズ」のようにオーダーをかけると、オーダーを受けたひとは「ツー フィレ サンキュー」といったように答えていました。要は、生産現場でよくある声出し確認です。ここで「フライヤー」は厨房での持ち場を示し、「ツー」は2,「フィレ」はフィレオフィッシュを指します。つまり、フライヤー担当者はフィレオフィッシュを2つ創るオーダーを受けたわけです。しかし、在庫管理も基本的にはプログラム通りに実施され、この記号のような言葉のやりとりは、果たして必要なのだろうかと疑問に思います。
スターバックスで、「To Go で」とか「For Here 〜」といった掛け声を聴いたことがある人もいるかもしれません。海外旅行をよくされる方にはおなじみでしょうが、「お持ち帰りされますか?」といった質問が海外では「For here? or To go?」と聞かれることから応用されていることがわかります。ただ、大抵の場合そのオーダー内容は POS に登録されて作成エリアの掲示板画面に表示され、オーダーを受けたひとは淡々と作り、画面の指示通りにお客様に商品を渡します。
このように、プログラム化された掛け声システムは、必ずしも効果的に機能しているとは考えがたい場面が多いです。POS システム、クラウド ベースの ERP システムやタブレット アタッチ型のスモール デバイスなどがこれらの問題を解消していくことでしょう。
Sometimes, I hear that a staff talks by using English or any other foreign languages in foreign food chains. Is it really working well as its words? From my perspective, it sounds different from what the service persons and Kitchen staffs talk at the expensive and well trained restaurants. In general, those words sound like as only symbols, not a meaning word at the foreign food chains.
For example, it has not been processed this operation yet, an operation commander said "Flyer, two Filet plz" and a Kitchen staff respond to him "two Filet Thank you" in Japanese McDonald's some years ago. This operation is the same as the confirmation process in the factory. However, is it really required this symbolic process? Stock administration is managed by complete programs, and kitchen staffs operate following those programs as well.
Similar to McDonald's, Starbucks register staffs say "To Go" or "For Here" to the drink or food staffs. If you have used US or UK Starbucks, it is not a surprising thing because US or UK Starbucks register staff ask the customer "To Go or For Here" directly. As usual, also, those staffs input information, for here or to go, into the POS system. And a drink or food staff make a confirmation order on the screen or written information on a cup. There is no need to make an additional confirmation each other. It enables them to hedge risk to take a miss.
As I illustrated above, talking confirmation is not working effectively in the programmed system. It should be better to use POS, Cloud based EPR, and small tablet device attachment POS systems. Those solutions work more efficiently and effectively for those foreign chains.
